I’m just not sure if I really want Google to know everything about me, where I go, what do I do in my spare time, what do I work on.

For god's sake. If you actually watched the video you'd know full well that it's open source and federated. You could run it on your home computer if you wanted to, or just for everyone in your business or school. OR you could sign up to a large provider like Google, but any other company could be a provider too, so it doesn't matter if you don't trust google.

Onenote may be a little overkill for your needs if you don't actually fact-check your own thoughts.

Wow, I hadn't known Microsoft OneNote is open-source and platform-agnostic. Except -- no, wait, it isn't. And that OneNote had simultaneous realtime automatic translation between arbitrary pairs of 40 languages. Or -- no, wait, it doesn't. But I guess open source, platform-agnostic, and simultaneous realtime automatic translation are no big deal, right? Or -- no, wait, they are!
